With the winter months edging ever so closer to us, it does not mean that we can’t still enjoy some of our favorite foods that we all love during the summer. With that in mind, I’ve got a simple but very tasty recipe for one of my favorites. This macaroni salad recipe will make a very large bowl, its great for parties or get together’s.
Simple Macaroni Salad
1 Lb. Box Elbow Macaroni
4 Hard Boiled Eggs (finely chopped)
1 ½ cup of Mayonnaise
1 Red Pepper (finely chopped)
2 Cucumbers (cubed or chopped small)
½ Tbsp. Onion Powder
½ Tbsp. Garlic Powder
¼ Tbsp. Salt
First of all, hard boil 4 eggs. Its takes about 20 minutes from first boil till they are done. Rinse in cold water, peel and set aside. Then cook the box of Macaroni according to the manufacturers directions, (usually 8 to 10 minutes in boiling water). Rinse thoroughly and let drain in strainer. I try to get these 2 steps out of the way first because they are the longest. During that time you can chop up your red pepper. A small food processor works great to get the pieces small. This also works great for finely chopping the eggs too. Now peel and chop up 2 cucumbers.
Not to long after your macaroni is rinsed and strained, mix your mayonnaise with it to keep it from sticking together as it cools. The stir in your cucumbers, peppers, chopped eggs, onion powder, garlic powder and salt.
Then refrigerate. Its seems to be much better after it has chilled in the fridge for a couple of hours.
