Looking for something good for desert that is low carb and sugar free? With my husband being a diabetic, I am always trying to think up new good sugar free low carb Recipe to try. I have come up with a recipe for sugar free low carb pumpkin cheesecake. Boy is it yummy! Yes this recipe may be a little different as it dose not have a crust. However you do not even miss it.
2 8 oz packages cream cheese (Softened)
1 Tsp Cinnamon
1 Tsp Vanilla
1/2 Tsp Nutmeg
1 Cup Sugar Substitute
1/2 Cup Pumpkin Puree (I used Pacific Foods Organic)
Touch of butter to grease pan
Pre-heat oven to 350. In large mixing bowl mix all ingredients, other then the butter. Mix well until fully blended. Take the butter and grease a 9″ pie pan. Then dump the mixture into the greased pan. Place in pre-heated oven and bake for 45-50 minutes. Remove and allow to cool completely. Top with a touch of whip cream if you wish and serve. Refrigerate the remainder.
