Homemade Banana Muffins
When you have bananas that are too ripe to eat, don't toss them out. Use them to make these easy homemade banana muffins. You can make it with or without nuts.

- 1 Large Over Ripe Banana
- 2 Cups All-Purpose Flour
- 1/2 Tsp Salt
- 3/4 Cup Sugar
- 1 Large Egg
- 3 Tsp Baking Powder
- 1 Cup Milk
- 1/4 Cup Vegetable Oil
- 1/2 Cup Chopped Walnuts optional
First, you want to preheat the oven to 425 degrees.
Next, line muffin pans with 12 paper or silicone liners. If you don’t have liners, just be sure to grease the pan well. In a large mixing bowl or stand mixer, mix banana, milk, oil, and egg together. Mix well.
Now add in everything else other than the nuts and mix well.
Stir in nuts if you are using them.
Divide batter equally into lined muffin pan.
Place pan in the oven and then drop the oven temperature to 400 degrees. I know we had you heat it to 425 and now dropping it when ready to cook. That is so that it will cook for the first few minutes at the higher temp and then will slowly lower down to the 400 to finish off the baking.
Bake the muffins for 20-25 minutes until golden in color.
Serve warm or room temperature. They are great on their own or with a little butter. Better yet, use a little honey butter.
