Chocolate Peanut Butter Cupcakes

It is a chocolate peanut butter cupcake with mini Reese’s inside then topped with peanut butter, butter cream frosting…..YUM! What could be better then that??

Chocolate Peanut Butter Cupcakes

What You Need:
For Cupcakes
1 package chocolate cake mix
1-1/4 cups water
1/2 cup Peanut Butter
1/3 cup oil
3 eggs
24 miniature Reese’s cups

For Frosting
1/3 cup solid vegetable shortening
1/3 cup butter
3/4 cup peanut butter
1 teaspoon pure vanilla extract
4 cups confectioners’ sugar, sifted
4-6 tablespoons milk

How To Make:
Preheat oven to 350F. Line muffin tin with cupcake liners. In a large bowl, combine cake mix, water, peanut butter, oil and eggs. Mix on low speed for about 2 minutes or until well blended.

Fill muffin cups half full with batter. Add peanut butter cup to center of each cupcake, then cover with about a tablespoon of batter. Bake for about 20 minutes or until a toothpick comes out clean. Cool before frosting.

Beat shortening and butter together with electric mixer. Add peanut butter and vanilla. Gradually add sugar, beating well on medium speed. Add milk, one tablespoon at a time, and beat at medium speed until light and fluffy. Now just frost the chocolate peanut butter cupcakes. If you want the frosting to look the picture above, just use a pastry bag with a large tip. Squeeze the bag and make a circle as you work your way up with the frosting. That’s it! Now you get to enjoy your chocolate peanut butter cupcakes!
