Homemade Banana Muffins

When it comes to making homemade banana muffins the riper the bananas the better the taste. They can be made with less ripe bananas if that is what you have, but they are sweeter and more banana flavor with really ripe bananas.

This recipe will make one dozen muffins.

What You Need:

  • 1 Large Over Ripe Banana
  • 2 Cups All-Purpose Flour
  • ½ Teaspoon Salt
  • ¾ Cup Sugar
  • 1 Large Egg
  • 3 Teaspoons Baking Powder
  • 1 Cup Milk
  • ¼ Cup Vegetable Oil
  • 1/2 Cup Chopped Walnuts (optional)

How To Make These Muffins:

First, you want to preheat the oven to 425 degrees.

Next, line muffin pans with 12 paper or silicone liners. If you don’t have liners, just be sure to grease the pan well.

In a large mixing bowl or stand mixer, mix banana, milk, oil, and egg together. Mix well.

Now add in everything else other than the nuts and mix well.

Stir in nuts if you are using them.

Divide batter equally into lined muffin pan.

Place pan in the oven and then drop the oven temperature to 400 degrees. I know we had you heat it to 425 and now dropping it when ready to cook. That is so that it will cook for the first few minutes at the higher temp and then will slowly lower down to the 400 to finish off the baking.

Bake the muffins for 20-25 minutes until golden in color.

Serve warm or room temperature. They are great on their own or with a little butter. Better yet, use a little honey butter.
