Easy Instant Pot Blackberry Bundt Cake

This dessert is super easy as we are going to dress up a normal box cake mix. Plus this blackberry bundt cake is made right in the Instant Pot so no need to heat up the kitchen with the oven.

This is also a great way to use up some of those fresh blackberries too. Another great thing about this recipe is it is versatile. Meaning if you don’t have blackberries. you can use other fruit such as blueberries, raspberries, or even strawberries.

To make this recipe you will need a 6qt or larger Instant Pot and a 7-inch bundt cake pan.

How To Make This Bundt Cake:

Grab a large mixing bowl, mix cake mix, eggs, water, and oil together until well blended.

Next, mix in the blackberries. Or another berry if you like.

Give the 7-inch bundt pan a good greasing then lightly dust with flour.

Now pour the mixed cake batter into the bundt pan.

Pour 1 cup of water to the inner pot of the Instant Pot. Then place the trivet inside the pot.

Make a foil sling (or use a bought one) and carefully lower filled bundt pan into the pot onto the trivet. Loosely fold foil sling over the top of the bundt pan.

Next, close the lid and turn the valve to sealing.

Cook on high pressure for 35 minutes.

When it is done, open the valve for quick pressure release.

When pressure is gone, open the lid and carefully lift the sling out of the pot. Let cool on the counter for 30-60 minutes.

Use a plastic knife (or another flat object) to gently separate the cake from the sides pan. Then place a wire rack on top of the pan and flip it over to empty the cake onto the rack.

Making The Glaze:

In a medium bowl, whisk all glaze ingredients together until smooth. Pour over the bundt cake and allow the glaze to drip down the sides.

Allow the glaze to harden for about 20 minutes before serving.

  • 1 Cup Blackberries slightly crushed (pulse a few times in food processer works great)
  • 1 Box French Vanilla Cake Mix

Glaze:

  • 3 Tbsp Milk
  • 1 Tsp Vanilla Extract
  • 1 Cup Powdered Sugar
