Sopapilla

One of my favorite desserts is Sopapilla. I try NOT to order it every time we go out to a Mexican restaurant, but it is REALLY hard. So, of course, I wanted to try my hand on it at home!

It wasn’t really hard at all. It only takes 3 ingredients, and it doesn’t take long at all to bake (and, it’s healthier when you bake it in the oven rather than frying, right??)!

On to the nitty gritty…

What you need:
Flour tortillas
Butter
Cinnamon sugar

What you do:
1. Pre-heat your oven to 350 degrees.
2. Spread butter on your tortillas and sprinkle with cinnamon sugar. I pretty much covered mine with cinnamon sugar because I love the taste, and next time I will probably put a little bit more on.
3. Bake for 5-10 minutes. I would start keeping an eye on it after 5 minutes to make sure it doesn’t start to burn.
4. Cut into triangles and serve with vanilla ice cream or whipped cream if desired.

This was really, really good! I will totally be making it again. I was actually talking to a friend of mine from Mexico about this after I made it, and she told me she’s never actually tried to make it herself, which made me feel totally domesticated! It was so much fun to be able to tell her how it turned out, and now that she’s going to try it, I can’t wait to hear how hers goes!

I’m trying to see if I feel brave enough to try out another Mexican recipe now. I’d love to give fried ice cream a go. That stuff is yummy! 🙂
