Finding good gluten free recipes to make for dinner is not always easy. If you are looking for something new to try I think you will like this one. Its pretty much a one dish meal. Has all the veggies, meat and carbs all in one. It is also easy to make and only take about 35 minutes total between prep and cook time. This is a recipe that does not break the bank to make either. It works out to be about $1 a serving and if you can find some of the items on sale you could probably do it even cheaper than that. I have also included a link at the bottom for a nice gluten free recipe for german chocolate cake that would be a great dessert to have after you are finished with your meal.

Recipe For Asiago Covered Potatoes & Kielbasa

Prep time 10 min.
Cook time 25 min.

What You Need:

6 med potatoes
1-14 oz. pkg. Kielbasa sausage
2-cups frozen mixed vegetables
2-cups Asiago Cheese sliced or shredded
½ onion chopped
salt and pepper to taste
olive oil

How To Make:

Heat olive oil in a large skillet.
Cut up potatoes into chunks and put into skillet along with chopped onions and salt and pepper and cover.
Cut sausage into ½” thick pcs. and add to potatoes along with frozen vegetables.
Cover and cook for about 20 min. stirring occasionally.
When potatoes are soft, top with cheese and let it melt, once melted ENJOY!
