Vegetarian Recipe For Last Minute Veggie Stew
If you are looking for something easy and good for dinner check out this easy stew. This is a vegetarian recipe, but even if you are not a vegetarian you don’t even miss the meat. Great dinner to warm you up on a cold winter or early spring night. This is one of those easy recipes that you can even put in the crock-pot. Lets face it crock-pot cooking is my favorite way to cook! I even added a link for an easy vegetarian desert at the bottom of this post.

Vegetarian Recipe For Last Minute Veggie Stew

Serves 10
5 min. to prep.
Cook time 30-min OR leave it in a crock-pot for 4 hours

What You Need:

1-can green beans
1-can whole mushrooms
1-can diced tomatoes with chili seasoning
1-can whole new potatoes
1-can pinto beans
1-can navy beans
1-can sliced carrots
2 cups water OR veggie broth
1 can veggie soup with noodles
1 ½ cup uncooked noodles
Salt and pepper to taste

How To Make It:

1) Pour all ingredients into crock-pot except uncooked noodles.
2) Add salt and pepper to taste.
3) Cook on high for 30 min or if you are cooking for more than 1 hour cook on low.
4) Add uncooked noodles 15 min. before you are ready to eat.
Check noodles to be sure they are done.
5) Serve and enjoy!
